Cypress Grove Humboldt Fog
Creamiest goat cheese ever. A true American original from Arcata, California. Floral, herb, mushroom notes. Lovely with roasted grapes.

Day 2 [Saturday, December 9]
Hooray for stinky cheese! Classic, luscious washed-rind cheese from France. Yummy buttery complexity. Awesome, believe it or not, with French fries or potato chips.

Vermont Creamery Bonne Bouche
THE flagship goat cheese from renowned Vermont Creamery. Mild with pleasant yeasty and light piquant flavors. Looks great on a cheese plate, especially nestled next to some San Daniele Prosciutto.
Wine pairing: The Holy Snail Sauvignon Blanc or a dry rosé

Neal's Yard Dairy Montgomery's Cheddar
Classic, bright acidic UK flavors from the home of Cheddars. Soft, creamy mouthfeel with savory flavors. Place some cured meats next to it on the cheese board.

Day 5 [Tuesday, December 12]
Rogue Creamery Enraptured Blue (Organic)
This traditionally produced blue is aged in organic wine. Piquant with aromatics of grapes and fruit. You can only find it here! Terrific with oysters.

Day 6 [Wednesday, December 13]
Sheep and cow milk come together in this washed-rind wonder from France’s Basque region. Rich nutty flavors, silky texture. Bright green Lucques olives pair nicely.

Day 7 [Thursday, December 14]
Emmi Roth Grand Cru (Organic)
This nationally award-winning cheese is produced traditionally, in copper vats. Nutty, sweet with umami notes. Lingering finish. Goes great with candied walnuts.

Day 8 [Friday, December 15]
Rapin Le Maréchal
Spicy and delicious from the Swiss Alps. Rubbed in local Alpine herbs. Take time to savor the complex flavors and aromas, especially with some fig spread and crunchy rustic bread.

Cellars at Jasper Hill Hartwell
Lovely, luscious soft-ripened cheese washed in Eden Vermont Ice Cider. Delicate texture, floral aromatics. Enjoy with nibbles of candied orange.

Day 10 [Sunday, December 17]
Ubriaco del Piave
Sweet, fruity and fragrant cow’s milk cheese from Italy. Macerated in wine must during the harvest. Amazing spectrum of flavors. Enjoy with a dollop of pear mostarda (also from Italy).

Uplands Cheese Pleasant Ridge Reserve
Three-time winner of American Cheese Society Best of Show. A small production, raw milk beauty. Brothy notes and a grassy sweetness that evolves to butterscotch and fruit.

Dutch Cheese Makers Truffle Gouda Klare Melk
